As the weather warms, light summery meals are back in vogue!

Today, I tried a new recipe from a weightwatchers magazine.

No, we aren’t on a diet!

With some good recipes, the dietary books are still worth a look. Without any substitutes required, it was already gluten free and dairy free food.

A few small changes made

  • Leek instead of onion, lightly sautéd, with a touch of chili and chives added for additional flavour.
  • Chicken covered in a light coating of rice flour.
  • Radicchio rather than green lettuce for Bob

and they were ready to go.

Were the cups a success?
